A company cafeteria is an essential facility that benefits the employees of the company, and food quality and safety are important matters. Food safety can be guaranteed by ensuring hygiene management of not only foodstuff but also various areas around to the kitchen. AEON Delight Vietnam (“ADV”) provides hygiene management and guidance to predict potential risks and prevent damage based on the HACCP system, an international hygiene management system.
HACCP is a hygiene management system that conducts a hazard analysis to identify hazards in advance such as various forms of microbial contamination, specifies critical control points to apply measures to prevent the hazards, and implements continuous monitoring. ADV applies the HACCP system for daily hygiene management using prescribed manuals and procedures for kitchen staff and equipment, such as cooking utensils, refrigerators and freezers. The staff who are properly trained to apply the system serve as managers to regularly check to see that set procedures are being followed and to provide guidance.
In order to secure food safety, ADV thoroughly ensures bacteria control of visible places as well as areas not visible to the eye. Regular inspections are conducted for items such as knives, cutting boards and doorknobs. In the food court, restaurant tenants are regularly surveyed, and the results are reported to each tenant together with advice for improvement.
